Roasted Blueberry-Basil Coconut Water Smash

Roasted blueberries, bright lime and fresh basil deepen into a cool indigo pour, lengthened with coconut water for a still, softly herbal evening drink.

What you’ll need
- 150 g fresh or frozen blueberries, plus 6 fresh blueberries for garnish
- 1 tablespoon pure maple syrup
- 2 wide strips lime peel, with minimal white pith
- 8 fresh basil leaves
- 60 ml fresh lime juice
- 360 ml unsweetened coconut water, well chilled
- 1 small pinch fine sea salt
- 2 thin lime wheels, for garnish
- 2 small fresh basil sprigs, for garnish
- Pebble ice, for shaking and serving

Mix the drink
- Heat the oven to 200°C (400°F). Combine 150 g blueberries, maple syrup and lime peel in a small baking dish and roast for 10 to 12 minutes, until the berries burst and release their juices.
- Remove and discard the lime peel. Let the berries cool for 10 minutes, then blend until smooth and press through a fine-mesh sieve. Refrigerate the roasted-blueberry base for 30 minutes, until thoroughly cold.
- Place the basil leaves, lime juice and sea salt in a cocktail shaker. Press gently three or four times with a muddler or the end of a wooden spoon to release the basil aroma without shredding the leaves.
- Add the chilled blueberry base, cold coconut water and one generous scoop of pebble ice. Seal the shaker and shake firmly for 8 seconds.
- Double-strain through the shaker strainer and a fine-mesh sieve so the drink remains smooth and the basil pieces stay out of the glass.

Serve it beautifully
The glass, temperature and first aroma all shape the drink. Set those details before the final pour.
- Chill two 350 ml Collins glasses for at least 10 minutes before mixing.
- Fill each glass three-quarters full with fresh pebble ice immediately before straining the drink.
- Divide the mocktail evenly between the glasses and give each one gentle stir from bottom to top so the colour stays even.
- Garnish each glass with one lime wheel, one basil sprig and three blueberries threaded onto a short reusable cocktail pick.
- Serve at once while the glass is frosty and the basil aroma is fresh; the drink is intentionally still rather than sparkling.
